The April Edit: Cherry Pies and Clear Skies with Spring on South Willow

Spring is my absolute favorite season! I love when it finally starts to warm up and all the birds and bees start coming back out. My sister and I spent a good portion of our spring break on South Willow and it was exactly what I needed to relax, recharge, and reset. Read on for my outfit picks for spring and a yummy recipe from our spring adventures at the farm.

Spring at the farm is the best time of year. Everything is waking back up and the warm air feels like a dream. I was so excited about my Zoom for Sunday Riley’s collab and it was fantastic; stay tuned (thank you Brian)! We also made the best sweet treats and I listed our cherry pie recipe below!

Sugar Free Cherry Jubilee Pie

Ingredients

  • 1 sugar-free pie crust
  • 4 cups cherries (fresh or frozen, pitted)
  • ½ cup monk fruit sweetener
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 375°F.
  2. Cook cherries, sweetener, and lemon juice in a saucepan for 5–7 minutes.
  3. Stir in cornstarch (mixed with 1 tablespoon water) and cook until thick.
  4. Remove from heat, stir in vanilla and butter.
  5. Pour into crust and bake 35–40 minutes until bubbly.
  6. Cool before serving.

Optional: Top with sugar-free whipped cream. 🍒

Spring Outfits

My sister and I love spring outfits and I linked some of my favorites below. We had such a good time in South Willow and are so excited to go back this summer. There’s lots of landscaping and planting going on and I can’t wait to see how everything turns out. This was my first trip to the farm without my little Boo, so we were definitely missing his big personality. I’m thinking I may get a puppy…

I was hoping to see some baby deer but no luck this time. The fawns are definitely here because I see them sitting down right in front of the cabins on our security cameras. They totally make themselves at home until we get here and even drink out of the bird bath we got for the blue birds.
