I have a slight obsession with peppermint anything. If it’s minty, it’s mine. So, this weekend I’m fueled up with peppermint mochas making mint chocolate chip pudding parfaits! Read on for the recipe and some cute green outfit pieces for March.
Ingredients
This recipe is super simple and no bake! Having said that, I still had to make two trips to the store because I thought I already had peppermint extract and Ziploc bags. But if you don’t forget something while your baking, who are you? Martha Stewart?
- White Chocolate & Chocolate Pudding
- Mint Chocolate Chip Oreo’s & Andes Mints
- Whip Cream & Milk
- Green Food Coloring
- Peppermint Extract
- Whisk, Rolling Pin, & a Ziploc Bag
- 2 Bowls & 4 Cups
- Optional: Peppermint Mocha

Steps
- Crush Mint Oreo’s and add to the Bottom of your Dessert Cups
- Mix Pudding with 2 Cups of Cold Milk and Whisk for 2 minutes
- Add 3 drops of Green Food Coloring and 3 Drops of Peppermint Extract to the White Chocolate Pudding
- Layer the Mint & Chocolate Pudding in the Cups
- Top with an Oreo, an Andes Mint, and Whipped Cream

That’s it! Mint Chocolate Chip Pudding Parfaits are super simple and a perfect St. Patrick’s Day dessert! Did I forget to top mine with the whipped cream? You bet I did! But they were still delicious!
